Tucked away in the forest of Hokujo, Hakuba, this small café lives in a converted Japanese family house. It's easy to miss from the road, but step inside and the place has a character all its own: the space is designed around the forest, with light filtering through the trees onto the tables. Once seated, leaving takes some effort.
The owner, a former veterinary nurse, opened the shop together with her dog. Most of the breads are made with rice flour from Nagano, blended to the shop's own recipe, and the colorful, inventive selection makes choosing hard. The bestseller since day one is the rice-flour milk donut, crisp outside and soft within. A few flavors of cheesecake rotate every week, and plenty of locals come back just for those. The house coffee, freshly whisked matcha and matcha latte pair nicely with everything on the counter.
After a hike, a day on the slopes, or just a slow wander around Hakuba, it's well worth the detour.
